Healthy “Thin Mint” Energy Bites
YOU NEED
- 1/4 cup + 2 tbsp Julie’s Real Cacao Espresso Almond Butter
- 1/4 cup gluten-free oats
- 1 tbsp honey
- 1 tbsp cocoa powder
- 2-3 drops peppermint oil
Directions:
Blend oats in a food processor until they’re a flour consistency. Add the rest of the ingredients and blend until everything is well combined. Roll 1 heaping tablespoon each into balls. Optional (but highly recommended 😜) - drizzle with chocolate chips + sprinkle with unsweetened cacao nibs. Let them set in the freezer 5-10 min. Makes approx. 7 bites.
