Quinoa Almond Butter Bites

Quinoa Almond Butter Bites

YOU NEED:

  • 1 ½ cups cooked quinoa
  • ½ cup oats6 tbsp flax meal
  • 1/3 cup hemp seeds
  • 1 tsp vanilla
  • 1/8 – ¼ cup maple syrup (for desired level of sweetness)
  • ¾ cup Julie’s Real Almond Butter (we used Cinnamon Vanilla Bean for some extra yumminess!)
  • ¼ cup melted chocolate (optional, we used Hu Simple Dark Chocolate)

DIRECTIONS:

  • Combine all dry ingredients in a mixing bowl.
  • Add almond butter and maple syrup and mix until evenly combined.
  • Roll dough into one inch balls, or line a 9x9 inch baking pan with parchment paper and spread batter into pan using a rubber spatula, pressing to spread evenly.
  • Refrigerate for 2 hours before serving.
  • If using a pan, lift parchment out of the pan and cut into squares.
  • Drizzle with melted chocolate and keep in the freezer, or in the refrigerator for up to a week.
