Quinoa Almond Butter Bites
YOU NEED:
- 1 ½ cups cooked quinoa
- ½ cup oats6 tbsp flax meal
- 1/3 cup hemp seeds
- 1 tsp vanilla
- 1/8 – ¼ cup maple syrup (for desired level of sweetness)
- ¾ cup Julie’s Real Almond Butter (we used Cinnamon Vanilla Bean for some extra yumminess!)
- ¼ cup melted chocolate (optional, we used Hu Simple Dark Chocolate)
DIRECTIONS:
- Combine all dry ingredients in a mixing bowl.
- Add almond butter and maple syrup and mix until evenly combined.
- Roll dough into one inch balls, or line a 9x9 inch baking pan with parchment paper and spread batter into pan using a rubber spatula, pressing to spread evenly.
- Refrigerate for 2 hours before serving.
- If using a pan, lift parchment out of the pan and cut into squares.
- Drizzle with melted chocolate and keep in the freezer, or in the refrigerator for up to a week.
