Sweet Potato Waffle with Coconut Vanilla Bean Cashew Butter
YOU NEED
- One small sweet potato
- 1 egg
- Julie’s Real Coconut Vanilla Bean Cashew Butter
- Cottage cheese
- Strawberries
- Maple syrup
- Pinch of cinnamon
Directions:
Spiralize one small sweet potato, saute until soft, then mix together with one egg. Transfer batter to a waffle iron and cook for about 4 minutes. Top with Coconut Vanilla Bean Cashew Butter, cottage cheese, sliced strawberries, a drizzle of maple syrup and a dash of cinnamon.
