Cashew Butter Frosted Muffins
YOU NEED
INGREDIENTS:
- Julie's Real Coconut Vanilla Bean Cashew Butter (the frosting!)
- 1 and 1/2 ripe bananas
- 1/2 cup rolled oats
- 1 egg
- 1 scoop strawberry protein powder (or your choice!)
- 1 tbsp ground flax
- 1 tbsp peanut powder (optional)
- 3 tbsp almond milk
- 1 tsp baking soda
- 1 capful almond extract (or vanilla extract)
- Pinch of cinnamon to taste
Directions:
1. Preheat oven to 350
2. Grease a muffin pan with coconut oil (or oil/butter of choice)
3. In a blender, combine ALL of the ingredients (except for the frosting)
4. Pour blended ingredients into the muffin pan and bake for ~15 minutes at 350
5. Remove from the oven, cool for a few minutes, add Julie's Real Coconut Vanilla Bean Cashew Butter on top for frosting
6. Enjoy!
