No Bake Cashew Butter Oatmeal Cookies
YOU NEED:
- 1 cup rolled oats
- 1/2 cup Julie's Real Classic Cashew Butter
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 1 tsp vanilla
DIRECTIONS:
1) Measure cashew butter, maple syrup, coconut oil and vanilla into a glass measuring cup (or microwave safe container) and microwave for 30 seconds.
2) Mix warmed ingredients to combine.
3) Mix cashew butter mixture with oats in a mixing bowl until combined and oats are uniformly covered.
4) Scoop spoonfuls of cookie mixture onto a parchment
lined cookie sheet or dish and refrigerate for 2 hours.
5) After cookies have firmed up, place them in a sealed container or zip-lock bag and keep in the fridge for up to one week.
