Paleo Banana Bread Muffins

YOU NEED

  • 3 ripe bananas
  • 1/4 cup coconut flour
  • 1/4 cup Julie’s Real Cashew Butter
  • 2 organic eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • a few dashes of cinnamon
  • dash of sea salt

Directions:

Preheat oven to 350. Line muffin tins (makes 8 larger or 12 smaller). Mash bananas in a bowl (I just used a fork), then add cashew butter, eggs and vanilla, and mix well. Add the rest of the ingredients and mix again. Spoon batter into lined muffin tins and bake for 25-ish minutes or until a toothpick comes out clean.
